I am not panning your idea at all. But I am unfamiliar with this dice rolling of which you speak in reference to LARPing... Ive attending quite a few Larps and run some myself and Ive never seen dice rolling for resolving anything in the game. Granted its been about 6 years since my last LARP experience. I imagine this dice rolling would slow it down immensely. I used to play Mindseye theater alot and though I didnt particularly enjoy all the whitewolf rules, the Rock-Paper-Scissors mechanic is pretty good for fast and dirty combat resolution. Now mass combat is trickier and I remember some that got pretty hairy but the way we worked it out had to do with sorting the initiative(speed/celerity) of each player and having each person stand in line from slowest to fastest and state their intentions then split the group into rational small combat groups with a narator to each group. Some of this took quick thinking and action on the part of the storyteller and narrators but usually it was fast enough to keep every one happy.
