That would be exactly the opposite of my experience. Perhaps it's the group I hang around with; in the theatrical LARPs (as you call them) I've been in, combat tends to be slow and annoying and fiddly (because we have an unfortunate bias toward complex systems) and are usually seen as interfering with role-playing as a result, so people try to avoid combat. On the other hand, while my experience with boffers is more limited, it has always seemed to me that running around whacking one another with padded weapons was the main goal of many boffer LARP participants (not that there's anything wrong with that; I for one could certainly use the exercise, just that it seems quite different from your experience).
